Menu...

Ok... this is my second week on the job... and the second week in a row that my family has not had a single vegetable while under my watch. I really think someone ought to call CPS... Look at the things we have eaten this week for dinner...

Monday: Ate at TaMollys (tacos and burritos for the kids...)
Tuesday: Ramon Noodles (ewww... I ate oatmeal)
Wednesday: Pancakes (no meat, no veggies, just flour and water)
Thursday: Sausage hotdogs (sausage on a bun with potato chips)

What in the world? I am soooo tired by the time I get home I do not have the energy to think about food much less cook. We bought stuff that we could throw in the crock pot when we went to the grocery story... but someone forgot to tell me how difficult it would be to actually throw it into the crock pot before walking out the door at 7am.

How in the world do ya'll do it? How do you cook nutritious, delicious meals that the entire family will eat?

Mini carrots in a bag. . .washed, cleaned, and ready to eat. If there is no other veggie, the kids get carrots.

Frozen corn and Frozen peas. . .plain in a bag. Dump some in a bowl, add a smidge of water and microwave until hot. Add butter or salt if desired.

Those are our standard veggies 'round here. . .at least for the kids. Tony and I will do salads to keep up our greens.

I also try to make sure the kids get fruit. . .they sell REALLY GOOD, REALLY reasonably priced grapes at Sam's in a big plastic box. We also do a lot of apples (get Gala, Fuji, or Pink Lady. . .and I get the smaller ones 'cause they don't seem as mushy). Thad LOVES canned pineapple and also bananas.

If all else fails, then they get raisins.

Roxanne has some great ideas -- AND keep lotsa Ranch dressing on hand for the carrots and anything else. H-E-B (and probably Wal-Mart) sells serving size apples w/ caramel or peanut butter and carrots and/or celery with Ranch dressing.

Frozen veggies COUNT!! Keep counting. AND -- here's the deal -- IT'S NOT easy. Don't let anyone tell you it is.

Some ideas:
Super Suppers -- make and freeze 6 meals for your family at a "party" that is about 2 or 3 hours long. Of course, your family has to eat at McDonald's the night you go.

www.savingdinner.com -- receive a 6-day menu complete with shopping list via email every week. $10 for 3 months (which, if you're counting is 78 recipes which will last me AT LEAST 6 months!) My family likes most of it, and it includes serving suggestions (i.e., side items that include veggies).

Fix It and Forget It Lightly cookbook -- for the Crock-Pot. Also a hit with my family -- me spending 30 minutes browning meat, grating cheese, boiling noodles, and just dealing with food in general at 6 a.m. is NOT a hit. Seemed to work better when I worked shorter days and could start it about 10 or 11 a.m.

Wow... that's tough. Sorry you're having such a hard time. The make a big batch and freeze some for later works. I like the other ladies' suggestions; good ones.

Don't worry. We have the same hodge padge meals at our house. My wife gets the guilts too. I think it is just the way life goes sometimes. How is the job going? What are you doing?

Umm, my kids eat canned fruit. Like pineapple and mandarin oranges. Is that OK?

Yeah, we've been pretty much stuck on meat, cheese, and some kind of pasta. They're lucky if I boil some corn on the cob. Now I feel guilty.
